Now this is caviar I can get behind! This is a favorite of everyone! It’s easy and healthy! It’s a definitely a crowd pleaser.

When I’m needing to take an appetizer or a snack to share for any gathering, this is always my first pick. I LOVE it!

It’s beyond flavorful and full of vegetables and even protein!

This vegetable chopper is my favorite gadget and helps cut these vegetables into the PERFECT size for this dip! I have it and as of right now, the star rating is at 4.5 and over 100,000 ratings!

Ingredients

  • Roma tomatoes
  • Avocados
  • Black beans
  • Black eyed peas
  • Corn
  • Bell pepper
  • Cilantro
  • Lime juice
  • Red onion
  • Italian dressing
  • Salt

How to make Cowboy Caviar

Chop all vegetables into small pieces.

Drain and rinse all food in cans.

Combine vegetables and beans in a bowl. Add in the rest of the ingredients. Mix well.

Serve with tortilla chips.

Notes and tips

This dip is a perfect example of add in what you like and take out what you don’t. Season with salt to taste. Sometimes I add in a bit more. 

I always add in more lime juice. 

I do usually do 2 bell peppers. One green and one red. 

We like onions, so I just chop until it looks good to me. 

Measure with your heart with this one. You can’t go wrong. 

If there are leftovers, you can put it in a container and put it in the fridge for a few days.

Ingredients

  • 1 15 oz can Black beans drained and rinsed
  • 1 15 oz can Corn drained and rinsed
  • 1 15 oz can Black eyed peas – optional drained and rinsed
  • 1 Bell pepper green
  • 1/3 cup Cilantro chopped
  • Juice from 1 lime
  • 1/4 cup Red onion
  • 1/2 bottle Italian dressing
  • 1/2 tsp Salt
