Dinner idea: Heidi’s Meatloaf

This is not your grandma’s meatloaf! This is moist and so delicious and comes together in a snap! As a bonus, there’s no ketchup topping!

I’m not kidding when I say that this meatloaf is going to the best meatloaf you’ve had. And if there’s one better, send me the recipe!!!

When my third child was 5, she was a picky eater. She would eat like a bird at mealtime if I let her. However, if I made meatloaf, she would take TWO servings! And not little kid servings either. She would out eat ME!

I’m telling you this is a meal you need to make your family, even if they don’t like meatloaf. My kids didn’t know that traditional meatloaf looked the way that it does because this meatloaf is fall apart moist.

Chances are you have all the ingredients you need to make this meal. It also comes together so quickly, just basically dump and then cook.

Ingredients needed.

  • Ground beef
  • Ketchup
  • Eggs
  • Saltine crackers
  • Onions
  • Cream of mushroom
  • Mustard *There’s only one person in my household who likes mustard so I don’t always have it in my home. I make it plenty of times without and it tastes great!
  • Salt and pepper

How to make Heidi’s meatloaf

Preheat oven to 375 degrees Fahrenheit.

Mix together all ingredients except half the can of cream of mushroom soup.

Spread into a casserole pan.

Spread the rest of the cream of mushroom soup on top.

Bake for 45 min to an hour.

Notes and tips

Sometimes I don’t have all the ingredients in my home, even if I do try to have my rotating pantry stocked. It just doesn’t happen for one reason or another, but you can still figure out how to make this and still have it taste great!

For example, I once didn’t have any saltine crackers in my home. However, I did have some Ritz crackers, so I used those instead and it gave the meatloaf a yummy buttery flavor!

I often make this without the mustard. There’s only one person who likes mustard, which isn’t me, so I forget to buy it and I don’t like buying it for one small recipe. It’ll just go bad before I can use the bottle up. So, I make it without, and it still tastes great.

  • 1 lb ground beef
  • 2 eggs
  • 1 can cream of mushroom soup
  • 1/2 pkg soda crackers crushed
  • 3 tbsp ketchup
  • 1 tbsp mustard
  • Salt and pepper to taste


  • Preheat oven to 375 degrees Fahrenheit.
  • Mix together all ingredients except 1/2 can of cream of mushroom soup.
  • Spread into a 8X8 square casserole dish.
  • Spread the remaining cream of mushroom soup on top.
  • Bake for 45 min – 1 hour.


    • You can opt to mix the entire can of cream of mushroom soup into the meatloaf. About half of my family members prefer it without it on top. 
    • If you don’t have mustard, I’ve made it without mustard, and it works just great. 
    • Also, I’ve made it with Ritz crackers instead of saltines and it gave the meatloaf a yummy buttery flavor so feel free to play around with things. 
    • If you want to make a 9X13 pan of this meal, I just double these ingredients.
