Dinner idea: Shredded Pork

This shredded pork is my go-to for sandwiches, nachos, tacos or even just having it on its own. It’s sweet but packed full of flavor.

I’ve been making this pork for about 10-15 years. We still love it. Some of our favorite ways to eat it is by having street tacos or having pork nachos.

I’m not a food blogger and I’m not a chef, I’m just a mom who is responsible to provide dinner for my family. (Yes, my husband and I went the more traditional route with our household, and it works for us. If it doesn’t for you, no shame.) This is a recipe I’ve had written down on an index card and have used many times.

Part of why I’m documenting all of my recipes online is my kids are getting older. I have two adult children, one of which is married. My daughter has asked for some of my recipes. I would love to one day have all my recipes in a place that I can easily print off and give to each of my children. That’s the goal anyways.

So, since I already want to type up my recipes, and I’m all about sharing homemade recipes and ways to provide for families, I thought I’d share here in case someone else would also like to try some of these recipes that another mom makes her family. I don’t come up with recipes to share and I’m not scrambling to find content to share, these recipes are ones I already make my family.

Ingredients needed:

  • Pork loin roast
  • Enchilada sauce
  • Brown sugar
  • Salsa

How to make Shredded pork

Combine all ingredients in a slow cooker and cook on low for 6 hours or on high for 4-5 hours.

Shred the pork.

Serve in tacos, on nachos or however you want to enjoy it.

Toppings can include:
-Lettuce
-Shredded cheese
-Avocados
-Salsa
-Lime wedges
-Tortilla chips
-Tomatoes

Tips and Ideas

This typically makes a lot of pulled pork, depending on the size of the roast you get. It freezes well! Whatever leftovers we have, I’ll let it cool down and then put it in a freezer plastic bag. Then, if I think I won’t get it to for a few months, I’ll wrap that plastic bag in newspaper and put it in another bag, label it and then freeze it. The newspaper will help with freezer burn.

Fresh squeezed lime juice is absolutely amazing on this pork! However, I don’t always have fresh limes, so I buy the Tru Lime packets. The taste is awesome.

  • 1 cup brown sugar
  • 3/4 cup salsa

We really like this pork in street tacos or on nachos. It also is good to be served as pork quesadilla.
