Dinner idea: White Chicken Chili

This is the perfect soup that’s full of flavor, easy to make and is loved by everyone. It’s comforting, hearty, creamy and a perfect chili to add to your dinner rotations. It’s simple but full of flavor.

You know those meals that you just crave all the time? The ones that are SO yummy but also comfort foods?

Yep, that’s this meal for me. I could eat this everyday and be happy as a clam.

Most of the ingredients I keep stocked in my pantry so I can honestly make this whenever I want. However, I don’t always have cilantro, but I will say that it adds so much to this soup if you add it in!

Ingredients needed

  • 2 lbs chicken cooked
  • 2 med onions diced
  • 1 tsp garlic minced
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 32 oz chicken broth
  • 4 cans great northern white beans drained and rinsed
  • 3 cans diced green chilies
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/2 cup ciliantro chopped
  • 8 oz cream cheese
  • 1 cup heavy cream

How to make White Chicken Chili

  1. Sauté onions and garlic in olive oil and lime juice over med-high heat. Cook until onions are translucent.
  2. Add all ingredients to crock pot and cook on low for 6-8 hours or on high for 2-4 hours.
  3. Once cooked, add cream cheese. Stir until melted.
  4. Stir in heavy cream.
  5. Add desired toppings.

Tips and Ideas

I like to use rotisserie chicken. It works great for this recipe.

When I add in the cream cheese, I take about a cup of the hot soup liquid and add it to a separate bowl with cream cheese. I mix it with a fork until it’s all mixed together well. Then I will add that into the soup.

 Toppings can include: 

  • Crushed tortilla chips 
  • sliced jalapenos. 
  • Chopped cilantro. 
  • Shredded Mexican blend cheese. 
  • sour cream
