Asian Bowtie Salad

This is quite possibly my favorite pasta salad ever! It’s full of everything I love! Spinach, crunchy peppers, loads of flavor and a hint of heat! So much YUM!

My MIL makes this and it is favorite among everyone. It is packed full of flavor and textures. Not to mention, it is pretty easy to make.

I love taking this to large family gatherings, parties and I’ve even made a batch of it for me to eat for lunch for a few days.

Ingredients needed

  • Bowtie pasta
  • Soy sauce
  • Extra virgin olive oil
  • Honey
  • Rice wine vinegar
  • Bell peppers
  • Chicken
  • Pepper
  • Spinach
  • Cilantro
  • Red pepper flakes

How to make Asian Bowtie salad

  • Cook pasta according to package directions, al dente.
  • In a saucepan, combine oil, soy sauce, honey and rice wine vinegar and heat on low until the honey is completely dissolved.
  • Put a teaspoon of olive oil in a skillet and cook the peppers for about 2-3 minutes, don’t let them get too soft, you want them to still have a bit of a crunch.
  • In a large bowl, combine pasta, sauce, chicken, peppers, cilantro and red pepper flakes. Toss together. Add in spinach and toss again.

Notes

You can skip the red pepper flakes if you don’t like heat. You can also add more if that’s your preference.

  • 3 tbsp rice wine vinegar
  • 1 red bell pepper julienned
  • 1 yellow bell pepper julienned
  • 2-3 cups rotisserie chicken
  • 1/4 tsp ground pepper
  • 3 cups spinach
  • 1/4 cup cilantro chopped
  • 1 tsp red pepper flakes

Instructions
